So you’re looking for a somewhat ‘healthy’ snack? You’ve got to use up all that foraged fruit hanging out in your freezer or bag?

Ingredients

  • water
  • foraged fruit (blackberries, elderberries etc.)
  • apples (crab or not)
  • sugar/honey
  • dehydrator/oven
  1. Wash and chop up your correctly identified fruits, with apple to balance the flavour and to help its consistency. (Note: using really bitter fruits together is not a good idea – E.g. NOT Rowan and Guelder rose).
  2. Use 1 cup of water to every 4 cups of fruit.
  3. Add in any flavouring you’d like: (cinnamon, spices…)
  4. Boil them up until soft.
  5. Employ your inner zen and strain through a sieve, to take out large seeds. This does take time…
  6. Add in sweetener if needed – honey/sugar
  7. Reheat until the sugar has dissolved.
  8. Spread out onto baking paper lined dehydrator trays. Make them thin – less than 3mm. Ideally make the outside a wee bit thicker.
  9. Cook for 6 hours – or until not sticky anymore.
  10. Cut up and store in fridge.
