So you’re looking for a somewhat ‘healthy’ snack? You’ve got to use up all that foraged fruit hanging out in your freezer or bag?
Ingredients
- water
- foraged fruit (blackberries, elderberries etc.)
- apples (crab or not)
- sugar/honey
- dehydrator/oven
- Wash and chop up your correctly identified fruits, with apple to balance the flavour and to help its consistency. (Note: using really bitter fruits together is not a good idea – E.g. NOT Rowan and Guelder rose).
- Use 1 cup of water to every 4 cups of fruit.
- Add in any flavouring you’d like: (cinnamon, spices…)
- Boil them up until soft.
- Employ your inner zen and strain through a sieve, to take out large seeds. This does take time…
- Add in sweetener if needed – honey/sugar
- Reheat until the sugar has dissolved.
- Spread out onto baking paper lined dehydrator trays. Make them thin – less than 3mm. Ideally make the outside a wee bit thicker.
- Cook for 6 hours – or until not sticky anymore.
- Cut up and store in fridge.
